Plans for the week

Now that my giveaway has ended, I'll go back to my regular weekly posts, until I have another giveaway. So, keep your eye on my blog! Plus, I hope you enjoy reading about my life too.

Here's this week's menu plan:

Monday & Tuesday - Penne and smoked sausage, broccoli
Wednesday & Thursday - Sweet and savory ribs, rice, parmesan zucchini strips
Friday & Saturday - Turkey pizza skillet, cauliflower

Today I think I'll give you a recipe for the pancakes I made earlier today. It made 14 pancakes, so I froze them in batches for us to have for breakfast throughout the week.

Banana Chip Pancakes

2 cups heart healthy bisquick
1 egg white
1 cup milk
1 cup mashed ripe bananas
3/4 cup peanut butter and milk chocolate chips

Place biscuit mix in a large bowl. Combine the egg white, milk, and bananas; stir into biscuit mix just until moistened. Stir in chips.

Pour batter by 1/4 cupfuls onto a greased hot griddle; turn when bubbles form on top. Cook until the second side is golden brown.
